Laura of Heavenly Homemakers always has terrific recipes on her site – her Taco Corn Fritter recipe sounds great.  After deciding that today was freezer cooking day at our house, I knew this would be a great recipe to make!
Ingredients:
1/2 lb cooked hamburger seasoned with taco seasoning
2 cups cornmeal
1 tsp baking powder
1/4 tsp sea salt
2 eggs
3/4 cup milk
1/4 cup honey
1/4 cup melted butter
3/4 cup shredded cheese
2 cups frozen or canned corn
Pour a little bit of oil into a frying pan/skillet.  Mix all ingredients together (love that!) and scoop out 1-2 tbsp, place into hot oiled skillet and press down to make a little pattie.  Fry for about 5-7 minutes each side.
The verdict is in – these are delicious!  We had a few as a snack just now.  And, my 9 year-old made these completely by herself!  Go, Gracie!  :D

Homemade Busy Boxes

It’s another bad weather day.  I begin to load my dishwasher and notice it is awfully quiet right now…what are those kids up to? As I walk to where they are I notice a new wall has been scribbled upon with coloring crayons, and I think to myself – “ooh at least this time it wasn’t permanent marker.”  As I turn the corner I notice there is toilet paper coming from the bathroom – and yep – two little ones are playing in bathroom with a whole unrolled toilet paper roll.
Yep. I’ve been there. And my favorite cure for the “I’m Bored” problem is to have some homemade busy boxes at the ready. Busy Boxes are basically great boxes full of fun new puzzles, games, coloring books, actives or new toys. You can bring it out whenever you need to.

How to make your Busy Box



Step 1: You’re going to need a box! Choose whatever size suits your needs and your child’s age. A decorative hat box is both charming and functional, whereas a sturdy plastic tote can withstand years of use. If your child is old enough, consider their input when it comes to choosing their box style for a more personalized experience. You may also want to consider keeping a smaller busy box in the back of the car for those long road trips to Grandma’s! icon smile Conquer Boredom with Homemade Busy Boxes


Step 2: Select Your Items. A busy box can be item-specific such as a Craft Box, or contain a variety of items (a “freelance approach” if you will) to keep little hands busy—it’s up to you.
Here are a few ideas of what to put in your Homemade Busy Boxes
  • Egg Cartons – Get a clean, used egg carton and a package of plastic eggs (which are quite plentiful this time of year!). Then have your little one try to place each egg in the carton. For an added challenge, fill each egg with colored puff balls and have your child learn to sort their colors.
  • Stringing Beads – Large, brightly colored wooden beads and several pieces of string are always a hit! You could even use colored macaroni noodles in place of beads.
  • Family Photo Cards –What child doesn’t enjoy looking at pictures? Laminate several family photos to encourage face/name recognition and foster a sense of closeness between distant relatives.
  • Puff Ball Sorter – Similar to the classic plastic shape sorter, only much cheaper! You will need:  A good sized plastic container such as butter tub with lid and a Package of colorful puff balls available at any craft store.   Cut holes into the lid for the puffs to go through. Be sure that the holes are slightly *smaller* than the actual puffs, allowing for a bit of a challenge! Give the child a handful of puffs, show them how to use it once and walk away! J
  • New Color books or Activity books with some new crayons or markers
  • Puzzles
  • Small toys with interchangeable clothing like Polly pockets, magnet Melissa & Doug dress up dolls

Step 3: Explain the Rules. The purpose of a busy box is to provide enjoyment during certain times of the week (or day). Otherwise, it could easily wind up as just another toy box!  Many moms use these when they are nursing a new baby, during dinner hour or when homeschooling older children. I use them when the kids have driven me insane and I am about to lose it (hee hee).
